Soups

As you may have seen on Instagram , my love for soup is unconditional… Blame it on  the Russian blood..

I mean broccoli, beetroot, mushroom, pumpkin, split pea, chicken…

You can literally make one out of anything as long as you have a blender!

When you'll realize that all you need it to boil a few vegetables together (ex: carrots, onions, pumpkin and potatoes), give it a blend with coconut milk or cream-cheese like Philadelphia and just add a few spices at the end; you will understand how easy it is to make THE ultimate winter soup. Here are some of my best recipes:

Cauliflower / Red cabbage soup:

The perfect soup to impress your guests: 

Start by putting 2 medium saucepans on the stove (medium heat), in the first one add 2 potatoes and 1 cauliflower cut in florets + the stems + 1 vegetable bouillon cube, and in the other one add 2 other potatoes, another veggie bouillon cube and 1 half of a red cabbage; it should cook for about 15-25min (you can remove the cauliflower when it's ready and continue to cook your potatoes). Then simply make the first cauliflower soup by mixing the 2 potatoes + the florets, set aside and season with salt, pepper and nutmeg and blend the other ingredients together for the purple soup, season it with the same spices. Then the decoration is all up to you, you can either eat these soups together or separetely,the taste will always stay the same! :)

Green peas, coconut milk and mint soup

Such an easy and comforting soup to make, simply boil 2 potatoes to add thickness, about 200g - 300g of frozen green peas, and one roughly chopped onion in a vegetable bouillon cube before mixing it with 1 can of coconut milk and fresh mint leaves to add more flavor! + I was really looking for a nice green color so I added a few spinach leaves as well!🥬

The classic creamy pumpkin soup 

To make this delicious soup simply boil 2 large potatoes with 1 pumpkin cut in cubes, you can aso add 2 carrots roughly chopped and 1 onion; When it's all ready blend it in a blender and add 1 can of coconut milk to it as well or 2 tblsp of cream cheese and season with curry, 4 spices, cloves, ginger and salt&pepper obviously! Top it with fresh herbs and grilled nuts and enjoy!
