Healthy raspberry pie

For the pie crust:
100g rolled oats
1 big handful of soaked dates
Cinnamon, Cardamom a pinch of salt
1 tbls Coconut oil
For the filling:
400g of ricotta
1 or 2 mashed ripe bananas
Chia + Poppy seeds
1 egg ( a bit of maple syrup or honey to make it more sweet)
Simply mix the crust until you get a nice dough, flatten it down and place it into a circle mold, cook it for 10 min at 180°, meanwhile mix the ricotta filling with a whisk, and when the crust is ready fill it up with it and place it back in the oven for 30-40min at 180° as well, when everything is ready place it back in the fridge for minimum 2 hours, and then decorate it with fresh berries and enjoy!

Raw Vegan Birthday cake
For the crust: • 230g of walnuts
• 20g of coconut oil • 2 handfuls of softened dates • Cinnamon, pinch of salt, vanilla extract
For the filling: • 600g cashews
• 25cl Coconut milk
• 2 Coconut yogurts • Maple syrup • Frozen blackberries/ blueberries • 30g of coconut oil • Vanilla extract + Pinch of salt
The night before soak your cashews in water and let’em sit overnight; In the morning start by mixing all the crust ingredients in a food processor and put it at the bottom of your circular mold; Then drain and rinse the cashews and separate them in 2 bowl (60% for the biggest layer 40% for the smallest one); Mix the ingredients for the first layer: cashews, coconut milk, yogurt etc... and add a little bit of blackberries to add some color; You can also separate this mixture in 2 and add more berries to the second one! Finally repeat it for the second layer, I kept it white and didn’t add any berries to it, instead I kept them for my coulis! Place them in the fridge overnight and decorate with berries and flowers the next day! Enjoy!

Easy Banana, Peanut butter mug cake

To make it you first need to mash 2 ripe bananas in a mug, add 2 tbls of gluten free flour ( I used sorgo flour), a teaspoon of baking powder, 1 small egg, cinnamon and a tablespoon of peanut butter, place it in the microwave for2:30 to 3min and it’s ready!
Finally, top it with some more PB, nuts and cacao nibs and enjoy this guilt free mug cake ✨
Brownie / Pistachio energy balls
This recipe is very easy to make and all you have to do is to blend 2 handfuls of softened dates with 2 tblsp of peanut butter, a handful of almonds, a tablespoon of raw, unsweetened cocoa powder, a bit of sea salt and vanilla extract in a food processor and wait until it forms a nice dough. Leave it in the fridge for an hour to make it firmer and easier to roll afterwards!
Finally crush some pistachios and roll the energy balls in it, they’re now ready to be shared and enjoyed :)
