Sweet potato and rosemary raviolis
Homemade raviolis with sweet potato/ rosemary filling 🍀
For the filling: cook 1 sweet potato + 1 carrot + 1 handful of fresh rosemary in a pan with butter and add a bit of vegetable stock afterwards until soft enough to mash it (20-25mim) ; Mash it until it become a nice “puree”, season with spices and salt and set aside.
For the pasta, I used 50% whole wheat flour and 50% basic flour but I recommend using only normal white flour because it’s much better in terms of texture and taste (although it’s also the unhealthiest option :( ) Make your normal pasta dough with flour, eggs, salt and a bit of water, spread the dough evenly on a clean table and add the filing on one side, flip the other side to cover the fillings and finally cut them in circles and glue the corners with water.
Add them to your boiling water for 20min approximately (it depends on the thickness of your pasta and the flour used), drain them and eat them right away with Parmesan and olive oil! Buen apetito! 🇮🇹 •
